I was in the mood for Waldorf salad today, but I knew I couldn’t make a traditional one. Waldorf salad usually uses mayonnaise, but I’m temporarily avoiding eggs, so mayonnaise is out. I do, however, love (and eat many!) avocados, so I thought that would be an awesome mayonnaise substitute. Boy, was I right. This was seriously amazing.

This mayonnaise free avocado chicken salad recipe doesn’t sacrifice on the flavor, and it’s perfect if you are avoiding eggs or soy. Enjoy!

Ingredients:

1.5 lbs boneless, skinless chicken breast, boiled and diced
1 avocado, sliced
1 fuji apple, diced
2 ribs celery, diced
24 red grapes (approximately more or less to taste), 12 whole, 12 chopped
2 tbsp Dijon mustard
1 tbsp olive oil
1 tbsp Raw Apple Cider Vinegar
2 tsp lemon juice
pinch dried parsley
salt & pepper

Step 1: In a large bowl, combine chicken, celery, apples, 12 chopped grapes and lemon juice.

Mix well.

Step 2: In a small container, add avocado, Dijon mustard, olive oil and 12 whole grapes.

Using your stick blender, blend thoroughly.

Step 3: Add avocado dressing to chicken mixture, top with vinegar and parsley. Mix thoroughly.

Step 4: Taste test – adjust salt and pepper as necessary. If you’d like it to be more sweet, add additional chopped grapes. Or, if you end up hitting on one of those batches of grapes that are just plain not sweet (Ooh! Not fun when that happens!), try adding 1 tablespoon of honey. Enjoy!

    • Thanks! I added the lemon juice in there to stop the apples and the avocado from turning brown, and so far it’s been successful. It didn’t turn brown during the photo shoot (which took me a while because I have no idea what I’m doing! 😀 ), so I know it should last at least a bit. At this point, I can’t tell you exactly how long because everyone devours it so quickly I never get a chance to test! I’ll take that as a compliment though, hehe.

      BUT, based on my experiments with (and an upcoming recipe for) guacamole, I believe it would last a few days, or maybe a week in the refrigerator if you add a bit more lemon juice – just to be on the safe side.

  1. This was amazing!!! Added some walnuts too, I think it needed that. Accidentally added the vinegar when I blended the avocado/mustard lol! I was a little confused about the whole grapes, did you blend them with the avocado? Maybe I’m reading the directions wrong. Anyways, thank you for this recipes, by far the best paleo chicken salad I’ve ever had. THANK YOU! =D Keep posting more awesome recipes. 🙂

      I did blend the whole grapes with the avocado/mustard/olive oil. I figured I didn’t need to chop them because the blender would do it for me.
